A fan oven cooks faster because it moves the hot air, so recipes assume you drop the temperature by about 20C. Some manufacturers say 15C and some say 25C; 20 is the figure most recipe books use, and it is the one applied here.

About the Oven Temperature Converter

Oven Temperature Converter moves a cooking temperature between the four systems a recipe might use: Celsius for a conventional oven, Celsius for a fan oven, Fahrenheit, and British gas marks. Recipes rarely give all four, and the one they give is rarely the one your oven has.

The fan oven adjustment is the one that ruins more baking than any other. A fan oven moves the hot air around, which transfers heat faster, so the same dial setting cooks hotter. Recipes written for a conventional oven assume you will drop a fan oven by about twenty degrees Celsius. Manufacturers vary between fifteen and twenty-five; twenty is what most recipe books mean and it is what is applied here.

Gas marks are a lookup rather than a formula. The scale is not linear and the standard chart has fixed rungs, so an arbitrary Celsius value lands between two of them. The calculator gives the nearest mark and says when it is not exact, which is the honest answer: an oven with a gas dial cannot be set to anything in between.

The page shows its working, not just its answer. Where there is a formula it is printed with your own numbers substituted in, so you can check the result rather than take it on trust -- which is the difference between a calculator you can use for something that matters and one you cannot.

Everything runs inside your browser. What you type is never uploaded, never logged and never stored, and the calculator keeps working if your connection drops after the page has loaded.

Frequently asked questions

What is 180C in a fan oven?

160C. Fan ovens run about twenty degrees cooler for the same result because moving air transfers heat faster.

What gas mark is 200C?

Gas mark 6. The chart lists the full set; gas marks are fixed rungs rather than a continuous scale.

What is 350F in Celsius?

177C, which rounds to the 180C that recipes usually give, or 160C in a fan oven.

Should I drop by 20 degrees or 25?

Twenty is what most recipe books assume. Check your oven manual: some manufacturers specify fifteen or twenty-five.
